Di Cello Limoncello is an organic limoncello, handmade in Amsterdam East. The founder of Di Cello is Diederik Jonkers. In daily life he is a contractor and has always been busy making beautiful things. He prefers to make everything himself, including his limoncello. And with great success! In its first year (2023), Di Cello Limoncello has already been awarded a gold award at the International Wine and Spirit Competition in London.

The production process

Di Cello Limoncello is not only a delicious drink, but also a true craft. The lemons are hand picked to ensure that only the best and most flavorsome specimens are used. Diederik: “I usually get the lemons from Spain. I think organic is more important than the region where the lemon comes from.” After picking, the lemons are carefully washed and peeled, after which the peel is extracted and mixed with our own unique blend of sugar and spring water. This guarantees a perfect balance between sour and sweet. The limoncello is then bottled in small batches to maintain its remarkable quality.

Even more sustainable; an extra product!

Only the peel of the lemon is used for limoncello, while the fruit has so much more to offer. “Most limoncello manufacturers supply the peeled lemons to restaurants, if they are not thrown away. I make Di Nade Lemonade from it myself. We squeeze the fresh lemons, mix the juice with sugar and filter it only once. This allows the small flesh with the real vitamins of the lemon to be included in the lemonade. This way you get two beautiful products from one fruit.”

Diederik also tries to use as much of the peel as possible after extraction, so that there is zero waste. “It comes out very crispy from the pure alcohol. After grinding it, I try to use it in a citrus candle.”
